Lemon Cupcakes



La Castanyada i Halloween ja són aquí!!!! A casa ens passarem aquests dies de festa fent galetes, pastissos i cupcakes, molts cupcakes, visca :) Bé, també pintant l’habitació dels nens i deixant-la ben mona. Potser ens queda temps per anar al cinema també?

La recepta que us deixo avui no és terrorífica ni a base de castanyes i moniatos, és molt fresca i saborosa. Aquests cupcakes s’han convertit en els preferits del Miquel, és que és molt àcid, ell.

At home we’ll spend these holidays baking cookies, cakes and cupcakes, a lot of cupcakes :) Well, also painting the children’s bedroom and making it very cute. Maybe we’ll also have some time to goo to the movies? The recipe I post today is not terrifying or Halloween based, it’s very fresh and tasty in fact. These cupcakes have become Miquel’s favorite, he loves sour!


La recepta és de la Hummingbird Bakery, de Londres, però he doblat les mides per a que surtin més cupcakes (és que de la recepta original no surten més de 10 cupcakes, i què fem només amb 10 cupcakes??? Són tan bons que tothom els voldrà tastar!!!!)
El frosting de llimona és amb formatge philadelphia i mantega, i amb menys sucre que el que posarien els britànics, és que la recepta original ve amb buttercream de llimona i a casa no en són molt fans. Però vosaltres hi podeu posar buttercream i més sucre si us agrada un frosting ben dolç.


The recipe is from the Hummingbird Bakery, in London, but I have doubled the ingredients to have more cupcakes (in the original recipe you don’t get more than 10 cupcakes, and what can you do only with 10 cupcakes??? They are so good that everybody will want to taste hem!!!!) The lemon frosting is with cream cheese and a bit of butter, and with less sugar that the British would use. The original recipe comes with lemon buttercream and we are not fans of it at home. But you can of course use buttercream and more sugar if you like a very sweet frosting.


Ingredients:

240 g Farina
300 g sucre
3 teaspoons llevat químic (royal)
4 tablespoons ratlladura de llimona (i extra per decorar, si voleu)
80 g mantega, a temperatura ambient
240 ml llet
2 ous gran

Frosting de llimona:

150 g sucre glass
40 g mantega, a temperatura ambient
150 g formatge en crema (philadelphia)
2 tablespoons ratlladura de llimona
25 ml llet


Preescalfar el forn a 170ºC

Bateu la mantega amb l’ajut d’un batedor elèctric, o kitchen aid si teniu la sort de tenir-ne. Afegiu-hi el sucre, i quan tingueu una crema ben maca, afegiu els ous, d’un en un, i la ratlladura de llimona. Només amb l’olor que fa la massa al posar-hi la llimona, ja començareu a gaudir d'aquests cupcakes!!
En un bol, poseu-hi la Farina i el llevat i barregeu. Afegiu la Farina i la llet a la massa de mantega, en tres vegades, començant i acabant per la Farina, fins que estigui tot ben incorporat i tingueu una massa homogènia.
Poseu la massa a les càpsules o motlles de cupcake, fins a 2/3 de la seva capacitat. Fornegeu durant 20-25 minuts, fins que a l’inserir un escuradents al mig, aquest surti net.
Deixeu refredar els cupcakes abans de posar-hi el frosting damunt.
Per al frosting de llimona : Bateu tots els ingredients, menys la llet, a velocitat mitjana fins que estigui tot ben incorporat i barrejat. Finalment, tireu-hi la llet, barrejant a velocitat baixa, i quan estigui ben incorporada, poseu el batedor a velocitat alta. Continueu batent fins obtenir una crema ben airejada i suau, durant uns 5 minuts. Com més estona bateu, més airejada sortirà la crema.
Quan els cupcakes siguin freds, poseu-hi el frosting de llimona damunt i decoreu amb una mica de ratlladura de llimona (opcional)
La propera vegada els faré amb lemon curd, que encara no l'he provat en els cupcakes, i em temo que pot valer la pena. La Lorena n'ha publicat una recepta al seu blog, així que us animo a que la visiteu.

Ingredients:

240 g flour
300 g sugar
3 teaspoons baking powder
4 tablespoons grated lemon zest (plus extra to decorate, if you want)
80 g butter, at room temperature
240 ml milk
2 large eggs

Lemon Frosting:

150 g confectioners’ sugar
40 g butter, at room temperature
150 g cream cheese
2 tablespoons grated lemon zest
25 ml milk


Preheat the oven to 170ºC

Beat the butter with the help of an electric mixer, or kitchen aid if you are lucky to have one. Add the sugar, and when you get a nice cream, add the eggs, one at a time, and the grated lemon zest. Only smelling this cream with the lemon, you’ll already start enjoying the cupcakes!!
In a bowl, put the flour and baking powder and mix. Add the flour mixture and the milk to the butter mixture, in three additions, beginning and ending with the flour, until everything is well incorporated and smooth.
Spoon the mixture into the cupcake capsules or molds until two-thirds full, and bake for 20-25 minutes, or until a toothpick inserted in the middle comes out clean.
Let the cupcakes cool before putting the frosting.
For the lemon frosting:  Beat together all the ingredients but the milk on medium speed until the mixture comes together and is well mixed. Slowly pour the milk and beat on low speed, then when it is all incorporated, turn the mixer up to high speed. Continue beating until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten, the fluffier and lighter it becomes.
When the cupcakes are cold, put the lemon frosting on top and decorate with a little lemon zest (optional) Next time I will put lemon curd in the cupcakes, I've never made them like this, and I bet it's worth giving it a try. Cupcakes a Londres / Cupcakes in London

Sorry it's not in English this time. You can still have a look at the photos to get an idea of the places, and get the addresses in case you visit London and feel like having a wonderful cupcake. 


Un dia tan fantàstic i solejat, i jo aquí a casa tancada acabant de corregir tots els exàmens dels meus estimats alumnes. Encara me'ls estimaria més si no hagués de corregir tants exàmens, jejeje. Mentre faig una pausa per esmorzar una mica (te amb galetes sueques), us escric quatre línies explicant-vos els llocs de cupcakes per excel·lència a Londres que vem visitar amb el meu marit en la nostra escapada d'aniversari de casament. 


El lloc més conegut a Londres per a pastissos i cupcakes és "the Hummingbird Bakery". Ho vem poder comprovar perquè no parava d'entrar i sortir gent enduent-se caixes enormes amb cupcakes i pastissos d'un pam i mig d'alt. També tenen unes quantes tauletes perquè puguis prendre el teu cupcake in situ acompanyat d'un cafè o un tè. Vem demanar el Red Velvet, que fan en versió pastís i cupcake, i és el seu clàssic. La magdalena estava moooolt bona, suau i súper esponjosa, però el frosting de buttercream era híper dolç!!!! Als anglesos ja els agrada aquesta dolçor extrema, però a nosaltres ens costa una mica. Tot i així, és un "must" si aneu a Londres. La trobareu a:

La nostra segona parada cupcakera va ser a la Primrose Bakery, molt mona ella, amb un banquet de ferro a fora per seure a assaborir les seves delícies. Vem visitar la Bakery de Covent Garden i la vaig trobar més petitona del que pensava, potser la de Primrose Hill és més gran. Tot i així estava plena de cupcakes i pastissos amb una bona pinta.... Vaig tastar un mini cupcake de vainilla amb frosting de buttercream de vainilla i sprinkles de colors, tot suuuuuper dolç.

Un lloc molt mono que vem descobrir va ser el Sweet Couture, amb uns cupcakes que feien un goig!!!! No vem tastar-los perquè portàvem un empatx de sucre impressionant, però m'aposto el que vulgueu a que estaven boníssims. Els podreu trobar a:

El lloc que no es pot perdre ningú, i on és primordial fer una parada cupcakera a Londres és el "Peggy Porschen cakes".  Hi trobareu els pastissos més exquisits i delicats, i els cupcakes més meravellosos que us pugueu imaginar, tot envoltat d'un glamour i una delicadesa extremes, una passada, vaja. Situat en el barri fantàstic de Belgravia, molt a prop de Chelsea, i amb els clients més VIP del planeta (aquell dia vem trobar-hi la model Elle McPherson per allí), vem poder assaborir uns magnífics cupcakes amb un cappuccino deliciós. Tant al Miquel com a mi va ser el lloc que més ens va agradar, i on vem trobar els cupcakes més bons. Ell va menjar-ne un de gerds amb frosting de llimona i un gerd enorme coronant-lo, i jo un de plàtan amb pepites de xocolata, amb frosting de buttercream de plàtan i xocolata en pols per sobre. Els vem trobar magnífics, esponjosos, suaus, i amb un gust i aromes extraordinaris, no tan dolços com els de la Hummingbird Bakery i la Primrose Bakery, sinó més afruitats i naturals.

Vaig comprar la galeta perfecta del vestit groc que veieu a la fotografia, per 7 lliures!!! i va arribar a casa trencada, sniiiif :(
Potser he posat massa fotos en el collage, és que en vaig fer tantes!!! Us en posaré alguna més on es pugui veure millor l'essència de la Peggy Porschen.  




Finalment, un lloc que vem descobrir molt a prop del nostre hotel, i amb un encant especial, és el "Bea's of Bloomsbury", on fan esmorzars dolços i afternoon tea acompanyat de pastissos i cupcakes extraordinaris. El lloc té unes quantes taules a dins i un parell a fora, i tenen la cuina oberta per veure com treballen. Tenien pots de quilos quilos de philadelphia!!!! Vem menjar cupcakes de xocolata amb ganache de xocolata, molt suaus i aromàtics, i cupcakes de gerds amb frosting de gerds, també molt bons. El gust dels cupcakes el vem trobar molt semblant al de la Peggy Porschen, també molt afruitats i aromàtics, encara que l'estil del lloc no fos tan refinat. Tot i així, és un altre "must" de cupcakes a Londres, i tenen un llibre fantàstic de receptes que es pot comprar allí mateix, ja sabeu qui en té una còpia, oi?

Tarte Tatin aux Figues




Aquesta setmana ha estat d’aquelles en que un diu, però bueno, és que encara em poden passar més coses? Durant el cap de setmana passat vam treure els mobles i els llits de l’habitació dels nens per canviar-la, va ser molt dur. I més dur va ser encara dilluns quan vem celebrar el tercer aniversari del Bernat, sense ell. La Júlia i el Biel van bufar-li les espelmes, contents i plens de bons records d’ell, però sense ell. Llavors dimarts se’ns posa malalta la gateta de tres mesos que havíem recollit fa tres setmanes, i després de dos dies lluitant i anant amunt i avall a la clínica veterinària, va acabar morint ahir. Vem tenir poc temps per encarinyar-nos d’ella, però la veritat és que també ha estat molt dur.

This week has been like, but can something else happen to me too? During the last weekend we took the furniture and beds out of the children’s bedroom to change it all over, it was very hard. But it was even harder on Monday when we celebrated Bernat’s third birthday, without him. Julia and Biel blew his candles, happily and with lots of good memories from him, but without him. Then, on Tuesday our little three-month-old kitten that we had picked up three weeks ago got sick, and after two days fighting for it and going several times to the vet’s, it finally died yesterday. We had little time to get very attached to it, but the truth is that it’s been very hard too.


He arribat a divendres esgotada, amb una contractura a l’esquena, i pensant en tot el que encara em queda per fer durant el cap de setmana, ufff….  
Sort de les bones estones, que també n’hi ha, i dels de casa i dels amics que t’esbossen un somriure amb un gest o un petit comentari.

I’ve arrived on Friday being really exhausted, with a back contracture, and thinking about all the things I still have to do during the weekend, ufff....
Without the good moments, which yes, there are some, and without the people at home and friends who give a hint of a smile from a little gesture or comment, it would be impossible to keep on going.


Després de tantes coses amargues, us deixo amb unes postres moooolt dolces. Ara que encara en queden, val la pena fer servir aquesta fruita que és tan de temporada i tan nostra. Ahir el meu pare em va donar les últimes figues que li quedaven a l’arbre, així que de seguida em va començar a bullir el cap amb idees per fer-les lluir en unes postres. Crec que aquesta tarta tatin anirà perfecta.  La recepta és treta d’una revista de decoració francesa “maisons coté sud” que també inclou receptes.

After all these bitter things, I’ll leave you with veeeeery sweet dessert. Now that we still have some figs, it’s worth using this seasonal fruit at the most! Yesterday, my dad brought me the last ones left on the tree, so I started thinking right away about the best way to make them look and taste excellent in a dessert. I think that this tarte tatin will be just perfect. The recipe is taken from the French decor magazine “maisons coté sud”, which also includes some recipes.

Ingredients:

12 figues grosses
250 g sucre
100 g mantega
Extracte de vainilla

Per a 300g de pasta brisa
250 g farina
125 g mantega
1/2 tsp sal



Prescalfeu el forn a 180ºC
Per a la pasta brisa, poseu la farina en un bol i afegiu-hi la mantega tallada a trossets i la sal. Treballeu aquests ingredients fins obtenir una mescla semblant a un cous-cous. Mulleu-ho amb una mica d’aigua i feu-ne una bola ràpidament, sense treballar massa la pasta. Podeu deixar-la endurir una mica a la nevera abans d'estirar-la amb un corró.
Talleu les figues per la meitat.
Foneu el sucre amb la vainilla en un pot a foc mitjà, quan estigui fos, afegiu-hi la mantega i remeneu ràpidament. Poseu aquest caramel al fons del motlle de la tarta tatin. Després poseu les meitats de figa sobre el caramel, i finalment la pasta brisa a sobre de les figues, cobrint tota l’àrea del motlle.
Fornegeu durant uns 30 minuts. Quan ho traieu del forn, gireu la tarta sobre un plat mentre encara estigui calent, vigilant de no cremar-vos!!!
Aquesta tarta es pot menjar calenta, tebiona o freda, i acompanyada amb crema de llet o amb crema anglesa és una delícia. També us podeu atrevir i preparar-la amb altres fruites, jo aviat la faré de pomes J

Ingredients:

12 big figs
250 g sugar
100 g butter
Vanilla extract

For 300g of “pate brisée”
250 g flour
125 g butter
1/2 tsp salt



Pre-heat the oven to 180ºC
For the “pate brisée”, put the flour in a bowl together with the butter cut in small pieces, and the salt. Work the ingredients until you have a mixture that resembles couscous. Wet it a little little bit with water and form a ball very quickly, without overworking the mixture. You can let it harden a bit in the refrigerator before rolling it out using a rolling pin.
Cut the figs in halves.
Melt the sugar together with the vanilla extract in a saucepan over medium heat. When it’s all melted, add the butter and mix quickly. Place this caramel on the bottom of the tarte mold. Place the fig halves on the caramel, and finally the “pate brisée” on top of everything, covering all the mold area.
Bake for about 30 minutes. After taking it from the oven, turn it onto a plate while still hot, and take care not to burn yourself!!!
This tarte tatin can be eaten hot, warm, or cold, and served with cream or English cream is just so delicious. You can also dare and prepare this tarte using other fruit, I will soon be trying it with apples J

Buttermilk

Força gent m'ha preguntat què és el buttermilk. Aquí en teniu una petita explicació:

El buttermilk és un producte làctic. Originalment era el líquid que quedava al batre la mantega per separar-ne la nata.
També és un tipus de beguda làctica fermentada, comuna en països càlids (l'orient mitjà, Pakistà, India, etc.) on la llet fresca s'agriaria ràpidament. A més, és popular als països escandinaus i els Països Baixos, encara que tinguin un clima més fred.
Avui en dia, el buttermilk és un producte làctic fermentat. A la llet de vaca li afegeixen una bacteria d'àcid làctic (streptococcus lactis), que fa que es formi un gust una mica agre, semblant al del iogurt. L'àcid de la llet també fa que el buttermilk sigui més cremós que la llet sola.
El buttermilk s'utilitza en masses per a pastissos i cupcakes, ja que en combinació amb el bicarbonat fa que es crein bombolletes, les quals fan que la massa quedi més esponjosa.
Si no podeu comprar buttermilk, a casa nostra és bastant difícil, podeu fer servir llet sencera de vaca tallada amb suc de llimona o amb vinagre blanc. La proporció és d'una cullerada gran de suc de llimona per 250 ml de llet, i deixar reposar 10 minuts. També es pot fer servir iogurt natural.




Many people have asked me about buttermilk. Here I post a small explanation: 



Buttermilk is a dairy drink. Originally, buttermilk was the liquid left behind after churning butter out of cream. It also refers to a fermented milk drink common in warm climates (Middle East, Pakistan, India) where fresh milk would go sour so quickly. It is also popular in Scandinavian countries and in the Netherlands, although their climate is colder.
Nowadays, buttermilk is a fermented dairy product. A lactic acid bacteria (streptococcus lactis) is added to cow's milk, creating a sour taste caused by acidity in the milk, similar to yoghurt. The acid also makes buttermilk to be creamier than normal milk. 
Buttermilk is used in cake and cupcake doughs because combined with baking soda, little bubbles are created, and so the doughs turn out fluffier. 
If you can't buy buttermilk, in some countries it's quite difficult, you can use normal cow's milk and add lemon juice or white vinegar. The proportion is one tablespoon of lemon juice for each cup of milk (250 ml), and let rest for 10 minutes. Yoghurt may also be used instead.

Cupcakes de Plàtan / Banana Cupcakes



Avui en dia estem acostumats a anar d’un lloc a un altre de manera individualista, anant de casa a la feina i de la feina a casa (fent parades entremig per anar al súper o fer encàrrecs) i destinant el temps lliure a coses que ens agraden a nosaltres només o a la nostra família. De vegades costa trobar el temps i el lloc per trobar-nos amb els altres, amb els amics, amb els companys, amb aquella gent que potser veiem sovint, fins i tot a diari, però amb la que només tenim temps de dir-nos hola i adéu.
Per això, una trobada de famílies i professors de l’escola, amb dinar de germanor inclòs, és una excusa fantàstica per poder parlar i conèixer millor persones amb les que compartim moltes coses, però amb les que ens és difícil poder tenir una conversa tranquilament.

Nowadays we are used to go from one place to another in an individual way, going from home to work and from work home (stopping in the middle at the supermarket or something similar) and spending our free time doing things that only we like or our family likes. Sometimes it’s difficult finding the time and place to meet the others, our friends, mates, and those people we often see, even daily, but with whom we only exchange a hello or goodbye.
This is why a families and teachers gathering at the school, with a nice lunch together included, is a great excuse to chat and get to know better people we share a great deal with, but with whom we find it hard to have a nice conversation.


Avui a l’escola no només ens hem pogut trobar i passar una bona estona plegats, sinó que també ens hem unit per tirar endavant una causa solidària pròpia. És una gran satisfacció veure tantes persones que aporten el seu granet de sorra per ajudar els altres, sobretot en temps difícils. Una persona sola no fa res, però tots junts PODEM!!! No deixeu de visitar la pàgina del nostre projecte a Gàmbia Som un Bloc.
A més, com que estic molt contenta pel dia d’avui, en el que a més hem tingut un temps extraordinari, i fins i tot calorós, doncs compartiré amb vosaltres una recepta de Cupcakes de Plàtan que us encantarà (porten pepites de xocolata a la massa i estan nyaaam!!). El frosting està fet amb mascarpone i també porta plàtan, per no oblidar-nos d’ell  ^-^

Today at school, not only have we met the others and had a great time together, we’ve also joined forces to carry out our own solidarity cause. It’s fantastic to see so many people contributing with their little bit to help the others, most of all considering the hard times we are having. One person cannot do anything on his/her own, but all together WE CAN!!! And because I’m very happy with today, when we’ve also had a wonderful weather, although even too hot, I’m going to share a recipe of Banana Cupcakes that I’m sure you’ll love (they have chocolate chips in the batter, yummy!!). The frosting is made with mascarpone cheese and banana too, we don’t want to forget it ^-^

La recepta és una adaptació per a Cupcake que he fet a partir d’una recepta per a muffins del llibre de William Sonoma.

The recipe is an adaptation for Cupcakes that I’ve made from a muffin recipe taken from the book by William Sonoma.

INGREDIENTS

235 g (1 ½ cups) farina
185 g (3/4 cup) sucre
1 ½ teaspoon bicarbonat
¼ teaspoon sal
125 g (½ cup) mantega a temperatura ambient
1 ou gran
2 o 3 plàtans molt madurs
3 tablespoons buttermilk
375 g (2 cups) pepites de xocolata

FROSTING
1 terrina mascarpone (250 g aproximadament)
1 plàtan molt madur
50 g sucre glass (o més si us agrada més dolç)

Pre-escalfeu el forn a 180ºC
En un bol, bateu la mantega i el sucre fins obtenir una mescla cremosa i llavors afegiu-hi l’ou.
En un altre bol, barregeu els ingredients secs: la farina, el bicarbonat i la sal. 
En un altre bol, aixafeu els plàtans i quan ja tingueu el puré, incorporeu-hi el buttermilk.
Afegiu la farina i el puré de plàtan a la barreja mantega de mantega que tenim al primer bol, en tres vegades, començant i acabant per la barreja de farina. Finalment, poseu-hi les pepites de xocolata i barregeu per a que quedin ben distribuïdes per la massa.
Distribuïu aquesta massa a les càpsules o motlles per a cupcake, omplint fins a 3/4.
Fornegeu durant 20-25 minuts, fins que els cupcakes estiguin dauradets per sobre o fins que al inserir un escuradents al mig, aquest surti sec.  
Deixeu refredar completament abans de posar el frosting a sobre.
Per al frosting, bateu tots els ingredients i deixeu endurir una mica la barreja a la nevera abans de posar-la a la màniga pastissera o directament sobre els cupcakes. Aquest frosting està boníssim!!!

 

INGREDIENTS

1 ½ cups (235 g) all-purpose flour
3/4 cup (185 g) sugar
1 ½ teaspoon baking soda
¼ teaspoon salt
½ cup (125 g) butter, at room temperature
1 large egg
2 o 3 very ripe bananas, mashed
3 tablespoons buttermilk
2 cups (375 g) chocolate chips

FROSTING
250 g approx mascarpone
1 very ripe banana, mashed
50 g confectioners’ sugar (or more if you like it sweeter)

Preheat the oven to 180ºC.
In a bowl, cream the butter and sugar until fluffy and then add the egg. In another bowl, stir in the dry ingredients: flour, baking soda and salt.
In a third bowl, mix together the mashed bananas and the buttermilk. Add the flour mixture and the mashed bananas to the butter mixture we have in the first bowl, in three additions, starting and ending with the flour mixture. Finally, blend in the chocolate chips and stir to distribute evenly in the batter.
Spoon this batter into the cupcake capsules or moulds, up to ¾ full.
Bake for 20-25 minutes, until the cupcakes are golden or until a toothpick inserted in the middle comes out clean.
Let cool completely before putting the frosting on top.
For the frosting, beat all the ingredients and let harden for a while in the refrigerator before putting it into the piping bag or directly onto the Cupcakes. This frosting is delicious!!

Yes, yes, yes, I'm here and Milk Bread



Sí, sí, sí, sóc aquí!!! Després d’unes setmanes plenes de coses, amb els caps de setmana ocupats, (amb viatge a Londres inclòs, prometo publicar fotos aviat!!!) he tornat al blog, visca!!! No us penseu que he estat sense fer res a la cuina en tot aquest temps, de fet, he provat un munt de receptes noves que aviat compartiré amb vosaltres, però d’una en una, si us plauJ
Tinc un pastís de formatge i nabius pendent que és una passada. El vaig treure del blog de la Lorena, Baked with Love. És d'una noia catalana que viu a Suècia i és xulíssim, ja sabeu que tinc una debilitat amb aquest país, però sobretot per totes les seves cosetes dolces... Per cert, el blog està de sorteig, així que feu-li una ullada!!!

I've got a blueberry cheesecake that I'll publish soon. I got the recipe from Lorena's blog, Baked with Love. It's from a Catalan girl living in Sweden and it's terrific, you know I love that country, but mostly all the sweet stuff they make... By the way, the blog is having a give away, so take a look at it!!! 

Amb la tornada al cole vaig provar de fer panets de llet per als entrepans dels nens, i van quedar espectaculars, així que el serà el primer que compartiré amb vosaltres. Van quedar tan bons, que de seguida en vaig haver de tornar a fer, ja que no només van bé per fer entrepans infantils, sinó que també són genials per esmorzar o berenar.  
Potser us semblarà una mica difícil això de fer pa, la veritat és que s’ha de ser molt meticulós amb les mesures, amb els temps de repòs i fermentació, i amb la cocció, però si ho segui tot al peu de la lletra us sortiran fantàstics!!

With the going back to school I tried to bake some milk bread for the kids’ sandwiches, and they came out great, so this will be the first I’ll share with you. They came out so good, that I soon had to bake another batch. They are not only good for children’s sandwiches, they are also great for breakfast or snacks.
Baking bread may seem a bit difficult to do, the truth is that you need to be very careful with measurement, resting and fermentation times and with baking, but if you follow the instructions meticulously, this will come out fantastic!!

 

Recepta per a 10 barretes (segons el llibre PAN de Xavier Barriga)

500 g farina de força mitjana (jo faig servir 250 g de farina de força i 250 g de farina normal)
12 g sal
40 g sucre
25 g llet en pols
20 g mel
1 ou + 1 ou per pintar
250 ml llet fresca
50 g mantega a temperatura ambient
25 g llevat fresc (7 g llevat sec de forner)

Amassar amb la màquina de fer pa, amb el programa d”amasado” (també es pot fer a mà però jo ho trobo molt feixuc i pesat). Posem tots els ingredients en el bol de la màquina, menys la llet que anirem incorporant a poc a poc durant l’amassat. Deixeu que el robot treballi fins que la massa estigui llisa i es desenganxi de les parets del bol. Jo deixo treballar la màquina fins que fa la primera parada, després d’haver estat amassant durant uns 10 minuts aproximadament.
Traieu la massa del bol i llavors talleu porcions de 80 grams i deixeu-les reposar 30 minuts tapades amb un drap humit.
Formeu barretes sense punta i poseu-les a la safata del forn. Pinteu-les amb l’ou lleugerament batut i barrejat amb una mica de sal. Feu-los uns talls quasi laterals i bastant profunds amb el cúter, i deixeu fermentar en un lloc càlid de la cuina durant 90 minuts.
Precalenteu el forn a 250ºC amb una olla amb draps mullats dins, per generar vapor, i vigilant que no falti aigua.
Quan els panets hagin quasi doblat el seu volum, pinteu-los un altre cop amb l’ou i fornegeu a 230ºC durant uns 12 minuts.
Es poden empolvorar amb sucre abans de ficar-los al forn.


Recipe for 10 small loaves (according to the book PAN by Xavier Barriga)

250 g baking flour + 250 g all-purpose flour
12 g salt
40 g sugar
25 g powdered milk
20 g honey
1 egg + 1 egg for brushing
250 ml fresh milk
50 g butter, room temperature
25 g fresh yeast (or 7 g dry yeast)

Knead with a bread making machine, using the “kneading” program (you may also hand knead, but I think it’s hard and tiring). Put all the ingredients in the machine bowl, except the milk, which we will incorporate little by little during the kneading process. Let the robot work until a smooth dough that comes off the bowl is formed. I let the machine work until the first stop, after having been kneading for 10 minutes approximately.
Take the dough out of the bowl and cut 80-grams portions. Let rest for 30 minutes covered with a wet dishcloth.
Make loaves with rounded ends and place them on an oven tray. Brush the loaves with the beaten egg with a little pinch of salt. Make lateral deep cuts using a cutter, and let them ferment in a warm spot of your kitchen for 90 minutes.  
Pre-heat the oven to 250ºC with a pot with soaking wet dishcloths inside, to generate steam. Be careful that water doesn’t evaporate completely.
When the loaves have almost doubled the volume, brush again with the egg and bake at 230ºC for about 12 minutes.
They can be sprinkled with sugar before baking.
