Pastís de Roses / Rose Cake




Després de veure el pastís tan fantàstic de Roses que té l'Alma al seu blog Objetivo Cupcake, he decidit provar-lo ja que avui és l'aniversari de la meva mami!! Quin regal més xulo aquest pastís, no?

After having seen the fantastic Rose Cake that Alma has in her blog Objetivo Cupcake, I've decided to try it since today it's my mom's birthday!! What a great gift this cake is, isn't it?

Així és com ha quedat al final. Una mica desfet pels costats, però encara prou bé.

This is how it came out at the end. It melted a bit on the side, but it was still good enough.


Aquests són els ingredients i els passos que he seguit.

Per al pastís:

500 g farina
250 g mantega sense sal
500 g sucre blanc
1 sobre de llevat Royal
2 culleretes petites d'extracte de vainilla
6 ous
120 ml llet

Per al farcit i les Roses:

500 ml nata per muntar
500 g sucre glas
500 g formatge en crema (philadelphia)
melmelada de nabius (o de la que us agradi)

Escalfarem el forn a 180ºC
Primer de tot posem la llet en un pot i ho posem a escalfar a baixa temperatura juntament amb la mantega. Quan la mantega estigui del tot desfeta amb la llet, podem tancar el foc.

Separem les clares dels rovells dels ous, i muntem les clares a punt de neu en un bol gran. Seguidament hi afegim el sucre i seguim batent. Quedarà una barreja com si fos nata muntada!!!

En un altre bol barrejarem els ingredients secs: la farina, el llevat i l'extracte de vainilla.

Al pot on hi ha la llet i la mantega fosa hi afegim els rovells d'ou i ho barregem.

Afegim la barreja amb la farina i la barreja amb la llet al bol on tenim les clares muntades amb el sucre. Fiquem la farina en tres vegades i la llet amb dues vegades, començant i acabant amb la farina.

Tindrem una massa força líquida i plena de bombolles!!! Perfecte!!



Ja ho podem fornejar durant uns 35-40 min. o fins que un escuradents surti net al punxar-lo al mig del pastis.

El deixem refredar abans de desemmotllar-lo i començar a farcir i cobrir.





These are the ingredients and the instructions.

For the cake:

500 g all-purpose flour
250 g unsalted butter
500 g white sugar
16 g baking soda
2 tsp vanilla extract
6 eggs
120 ml milk

For the filling and the Roses:
500 ml whipping cream
500 g confectioners sugar
500 g cream cheese
blueberry jam (or any kind that you like)

Pre-heat the oven at 180ºC
First of all, heat the milk and the butter in a pot at low temperature. When the butter has completely melted, that's it.

Separate the egg whites from the egg yolks. Whisk the egg whites until stiff in a big bowl. Add the sugar and mix. You will have a mixture that resembles whipped cream!!!

In another bowl mix the dry ingredients: flour, baking powder and vanilla extract.

In the pot where there is the milk and the melted butter, add the egg yolks and beat.

Add the flour mixture and the milk mixture to the bowl with egg whites and sugar. We will do this in different times, three for the flour and two for the milk, starting and ending with the flour mixture. Beat well.

You will now have a batter that is quite liquid and full of bubles. Perfect !!!


You can now bake for 35-40 min. or until a tooth-pick comes out dry when inserting it in the middle of the cake.

Let it cool down before taking out of the mold and starting filling and covering it.


Mentre es refreda el pastís podem anar preparant el que serà el farcit i la covertura. Muntem la nata amb un batedor elèctric. Quan estigui ben consistent hi afegim el sucre glas i el formatge en crema. Tindrem una crema dolça i força dura. Si veieu que us queda molt líquid, poseu-ho a la nevera una estona per a que s'endureixi.

While the cake is cooling down, we can prepare the filling and the cover of the cake. Whip the cream with the help of an electrical mixer. Then, add the confectioners' sugar and the cream cheese. We will have a sweet and hard cream. If it is too runny, you can place it in the fridge for a while to let it harden.

Quan el pastís estigui fred, el desemmotllem i obrim per la meitat, on posarem la melmelada i la crema.

When the cake has cooled down, take it out from the mould and cut it in two halves. We will put the jam and the cream.




Tapem el pastís amb la part de dalt i ho cobrim tot amb crema. Jo vaig tallar un tros de la part de dalt del pastís per a que no agafés tanta forma de bolet, sinó una forma més quadradeta.

We put the top part of the cake and cover everything with the cream. I cut off the top of the cake because I didn't want it to have a mushroom shape, I wanted a more square kind of shape.



Ara ja podem tenyir el que queda de crema amb colorant alimentari per obtenir un color rosa, o o podem deixar igual, que les roses blanques també quedem molt xules. Posem la crema en una mànega pastissera, amb boquilla d'estrella o de punxes, i comencem a fer cercles, començant pel mig i anant cap a fora. Mica en mica us anirà quedant tot el pastís ple de roses.
A mí el que em va costar més van ser les roses dels laterals. La crema estava massa líquida per la calor i se'm desfeien una mica.... Suposo que és cuestió d'anar agant la tècnica i pràctica.

Now we can color the remaining cream with food color to have a beautiful rose color, or we can leave the roses white, they are pretty this way too. Put the cream in a piping bag with a star tip, and start making circles, starting in the middle and moving out. Little by little you will have all your cake filled with roses.
I had a bit of difficulty with the roses on the edges of the cake. The cream was a little bit runny because it was hot, and they slipped down a little bit. I guess it's a matter of technique and practice.


Si us sobra massa del pastís (jo he fet servir un motlle de 25 cm de diàmetre i me n’ha sobrat), podeu fer-la servir per fer magdalenes o cupcakes.

A mi m’han sortit 6 cupcakes, que un cop freds he cobert amb xocolata que he fos prèviament. Quan la xocolata ja era freda i dura (a la nevera va més ràpid) he posat la crema per sobre i després uns quants sucres de colors per a decorar.

Queda així de mono!!!

If you have too much batter for the cake (I’ve used a 25cm diameter mold and there was too much batter), you can use it to bake muffins or cupcakes.

I could bake 6 cupcakes. When they've cooled down I’ve covered them with melted chocolate. When the chocolate was cold and hard (it’s faster in the fridge) I put the cream and some colored sugar sprinkles to decorate.

It has come out this cute!!!
